Layered Tex-Mex Fiesta on a Plate

Ingredients:

  • 1 pound ground beef
  • 1 onion, finely chopped
  • 1 packet taco seasoning
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 1 can (14 ounces) diced tomatoes, drained
  • 1 can (4 ounces) diced green chilies
  • 1/2 cup chopped fresh cilantro
  • 12 corn or flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup salsa

Directions:

  1. Preheat the oven to 375°F (190°C).

  1. In a skillet over medium heat, brown the ground beef until fully cooked.

  1. Add chopped onions and cook until softened.Stir in the taco seasoning, black beans, corn, diced tomatoes, diced green chilies, and chopped cilantro.

  1. Simmer for 5-7 minutes until well combined.

  1. In a greased 9×13-inch baking dish, layer six tortillas at the bottom.

  1. Spread half of the beef mixture over the tortillas, followed by a layer of shredded cheddar cheese.

  1. Repeat the layers with the remaining tortillas, beef mixture, and cheddar cheese.
