Description
A rich and moist sheet cake packed with double the peanut butter flavor, perfect for feeding a crowd. The cake base is made using a boiling method similar to a Texas Sheet Cake, resulting in a dense and tender crumb. It is topped with a creamy, sweet peanut butter frosting for the ultimate peanut butter lover’s dessert.
Ingredients
Scale
- For the Cake:
- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, melted
- 1 cup creamy peanut butter
- 1 cup water
- 2 large eggs
- 1 teaspoon vanilla extract
- For the Frosting:
- 1/2 cup unsalted butter, softened
- 1 cup creamy peanut butter
- 2 cups powdered sugar
- 1/4 cup whole milk
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking sheet (jelly roll pan).
- In a large mixing bowl, combine the flour, granulated sugar, baking soda, and salt.
- In a saucepan over medium heat, melt the 1 cup of butter. Stir in 1 cup of peanut butter and the water. Bring the mixture to a boil.
- Pour the hot peanut butter mixture over the dry ingredients and mix until well combined.
- In a separate small bowl, whisk together the eggs and 1 teaspoon of vanilla extract. Add this to the batter and mix until smooth.
- Pour the batter into the prepared baking sheet and spread it evenly to the edges.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- While the cake is cooling, prepare the frosting: In a medium bowl, beat together the softened butter, 1 cup peanut butter, powdered sugar, milk, and 1 teaspoon vanilla extract until smooth and creamy.
- Once the cake has cooled completely, spread the frosting evenly over the top.
- Cut into squares and serve.
Notes
- This cake uses a method similar to Texas Sheet Cake, where boiling the liquid ingredients ensures a very moist texture.
- Make sure the cake is completely cool before frosting, otherwise the butter in the frosting will melt.
- For extra texture, you can sprinkle chopped peanuts or mini chocolate chips over the frosting.
