Description

A crunchy, creamy, and comforting Tex-Mex inspired casserole that pleases the whole family. This easy weeknight meal combines tender shredded chicken with a savory mixture of cream of chicken soup, sour cream, and Rotel tomatoes. It is layered between crushed Doritos chips and melted cheddar cheese, then baked until bubbly and golden. It’s a fun twist on taco night that comes together in just over 30 minutes.

  • 2 cups shredded cooked chicken
  • 1 bag (9.75 oz) Doritos, any flavor (lightly crushed)
  • 1 can (10.75 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese, divided
  • 1 can (10 oz) Rotel tomatoes (drained)
  • 1/2 cup diced onions
  • 1/4 cup diced jalapeños (optional)
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, mix the shredded chicken, cream of chicken soup, sour cream, half of the shredded cheddar cheese (1/2 cup), drained Rotel tomatoes, diced onions, jalapeños (if using), chili powder, garlic powder, salt, and pepper until well combined.
  3. Lightly crush the bag of Doritos. Spread half of the crushed chips evenly across the bottom of the prepared baking dish.
  4. Spread the creamy chicken mixture evenly over the layer of crushed Doritos.
  5. Top the casserole with the remaining crushed Doritos.
  6. Sprinkle the remaining 1/2 cup of cheddar cheese over the top.
  7. Bake for 20-25 minutes, or until the cheese is melted and the casserole is bubbling.

Notes

  • Nacho Cheese or Cool Ranch flavor Doritos work best for this recipe.
  • Using a rotisserie chicken is a great way to save time on prep.
  • Make sure to drain the Rotel tomatoes well so the casserole doesn’t become soggy.
  • Serve with a dollop of guacamole, salsa, or extra sour cream on top.
