  • For the Sweet Potato Base:
    • 3 lbs fresh sweet potatoes (or 4 cups canned yams, drained)
    • 1/2 cup unsalted butter, melted
    • 1/3 cup packed brown sugar
    • 1/4 cup whole milk or heavy cream
    • 2 large eggs, beaten
    • 1 tsp vanilla extract
    • 1/2 tsp ground cinnamon
    • 1/4 tsp ground nutmeg
    • Pinch of salt
  • For the Topping:
    • Marshmallow Topping:
      • 2 cups mini marshmallows
    • Pecan Streusel Topping:
      • 1/2 cup chopped pecans
      • 1/4 cup packed brown sugar
      • 1/4 cup all-purpose flour
      • 2 tbsp unsalted butter, softened
      • 1/2 tsp ground cinnamon (optional)

Instructions

Step 1: Prepare the Sweet Potato Base
  1. For Fresh Sweet Potatoes:
    • Preheat your oven to 375°F (190°C).
    • Peel and cube the sweet potatoes. Boil in a large pot of salted water for 15-20 minutes or until fork-tender. Drain well.
    • Mash the cooked sweet potatoes in a large mixing bowl until smooth.
  2. For Canned Sweet Potatoes:
    • Drain and rinse the yams. Mash them in a large mixing bowl.
  3. Add the melted butter, brown sugar, milk, eggs, vanilla extract, cinnamon, nutmeg, and salt to the mashed sweet potatoes. Mix until fully combined and creamy.

Step 2: Assemble the Casserole
  1. Grease a 9×13-inch baking dish with butter or cooking spray.
  2. Spread the sweet potato mixture evenly into the prepared dish.

Step 3: Prepare the Topping
  1. For Marshmallow Topping:
    • Spread the mini marshmallows evenly over the sweet potato mixture.
  2. For Pecan Streusel Topping:
    • In a small bowl, mix chopped pecans, brown sugar, flour, softened butter, and cinnamon until crumbly. Sprinkle the streusel evenly over the sweet potato mixture.
  3. Combination Topping (Optional):
    • Cover half of the casserole with marshmallows and the other half with pecan streusel for a mix of both.

Step 4: Bake the Casserole
  1. Bake in the preheated oven for 25-30 minutes, or until the topping is golden and the filling is bubbling around the edges.
  2. For marshmallows, watch closely in the last 5-10 minutes to avoid over-browning.
