Step 1: Prepare the Sweet Potato Base
- For Fresh Sweet Potatoes:
- Preheat your oven to 375°F (190°C).
- Peel and cube the sweet potatoes. Boil in a large pot of salted water for 15-20 minutes or until fork-tender. Drain well.
- Mash the cooked sweet potatoes in a large mixing bowl until smooth.
- For Canned Sweet Potatoes:
- Drain and rinse the yams. Mash them in a large mixing bowl.
- Add the melted butter, brown sugar, milk, eggs, vanilla extract, cinnamon, nutmeg, and salt to the mashed sweet potatoes. Mix until fully combined and creamy.
Step 2: Assemble the Casserole
- Grease a 9×13-inch baking dish with butter or cooking spray.
- Spread the sweet potato mixture evenly into the prepared dish.
Step 3: Prepare the Topping
- For Marshmallow Topping:
- Spread the mini marshmallows evenly over the sweet potato mixture.
- For Pecan Streusel Topping:
- In a small bowl, mix chopped pecans, brown sugar, flour, softened butter, and cinnamon until crumbly. Sprinkle the streusel evenly over the sweet potato mixture.
- Combination Topping (Optional):
- Cover half of the casserole with marshmallows and the other half with pecan streusel for a mix of both.
Step 4: Bake the Casserole
- Bake in the preheated oven for 25-30 minutes, or until the topping is golden and the filling is bubbling around the edges.
- For marshmallows, watch closely in the last 5-10 minutes to avoid over-browning.
