Instructions
Step 1: Marinate the Chicken
- In a large bowl, combine the chicken pieces with soy sauce, rice vinegar, black pepper, garlic, and ginger.
- Cover and refrigerate for at least 30 minutes or up to 2 hours for more flavor.
Step 2: Cook the Chicken
- Heat a large skillet or wok over medium-high heat and add the vegetable oil.
- Remove the chicken from the marinade (reserve the marinade) and add it to the skillet in a single layer. Cook for 3-4 minutes on each side until golden and cooked through. Remove the chicken from the skillet and set aside.
Step 3: Prepare the Sauce
- In a small bowl, mix soy sauce, brown sugar, rice vinegar, black pepper, garlic, ginger, and chicken broth. If you prefer a thicker sauce, dissolve the cornstarch in 1 tbsp of water and add it to the mixture.
- Pour the sauce into the same skillet used for the chicken. Cook over medium heat, stirring constantly, until the sauce begins to thicken slightly.
Step 4: Combine Chicken and Sauce
- Return the cooked chicken to the skillet with the sauce. Toss to coat the chicken evenly.
- Cook for an additional 2-3 minutes to ensure the chicken is heated through and fully coated.
