  • For the Chicken:
    • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
    • 2 tbsp soy sauce
    • 1 tbsp rice vinegar
    • 1 tsp freshly ground black pepper
    • 2 cloves garlic, minced
    • 1 tsp fresh ginger, grated
  • For the Sauce:
    • 1/4 cup soy sauce
    • 2 tbsp brown sugar
    • 2 tbsp rice vinegar
    • 1 tbsp freshly ground black pepper
    • 2 cloves garlic, minced
    • 1 tsp fresh ginger, grated
    • 1/4 cup chicken broth
    • 1 tsp cornstarch (optional, for thickening)
  • For Cooking:
    • 2 tbsp vegetable oil
    • Fresh scallions for garnish (optional)

Instructions

Step 1: Marinate the Chicken
  1. In a large bowl, combine the chicken pieces with soy sauce, rice vinegar, black pepper, garlic, and ginger.
  2. Cover and refrigerate for at least 30 minutes or up to 2 hours for more flavor.

Step 2: Cook the Chicken
  1. Heat a large skillet or wok over medium-high heat and add the vegetable oil.
  2. Remove the chicken from the marinade (reserve the marinade) and add it to the skillet in a single layer. Cook for 3-4 minutes on each side until golden and cooked through. Remove the chicken from the skillet and set aside.

Step 3: Prepare the Sauce
  1. In a small bowl, mix soy sauce, brown sugar, rice vinegar, black pepper, garlic, ginger, and chicken broth. If you prefer a thicker sauce, dissolve the cornstarch in 1 tbsp of water and add it to the mixture.
  2. Pour the sauce into the same skillet used for the chicken. Cook over medium heat, stirring constantly, until the sauce begins to thicken slightly.

Step 4: Combine Chicken and Sauce
  1. Return the cooked chicken to the skillet with the sauce. Toss to coat the chicken evenly.
  2. Cook for an additional 2-3 minutes to ensure the chicken is heated through and fully coated.
