  • 1/4 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup mini marshmallows
  • 1/2 cup semisweet chocolate chips (optional)

Instructions

  • Preheat Oven: Set your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Mix Dry Ingredients: In a medium bowl, whisk together flour, cocoa powder, baking powder, and salt. Set aside.
  • Cream Butter and Sugars: In a large mixing bowl, beat softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
  • Add Wet Ingredients: Beat in the egg and vanilla extract until well combined.
  • Combine Wet and Dry: Gradually mix the dry ingredients into the wet ingredients, stirring until just combined.
  • Add Mix-Ins: Gently fold in mini marshmallows and chocolate chips, if using.
  • Form Cookies: Roll the dough into 1-inch balls and place them 2 inches apart on the prepared baking sheet.
  • Bake: Bake for 10-12 minutes, or until the edges are set but the centers are still soft. Avoid overbaking.
  • Cool: Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
