Crack Chicken Casserole

  • 4 cups cooked chicken, shredded or cubed
  • 8 ounces cream cheese, softened
  • 1 cup sour cream
  • 1 packet ranch seasoning mix
  • 2 cups shredded cheddar cheese (divided)
  • 1/2 cup crumbled cooked bacon (plus extra for garnish)
  • 1/4 cup chopped green onions (plus extra for garnish)
  • 2 cups frozen shredded hashbrowns, thawed
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a large bowl, mix the cream cheese, sour cream, and ranch seasoning until smooth.
  3. Add the shredded chicken, 1 1/2 cups of cheddar cheese, bacon, green onions, and hashbrowns. Stir until well combined. Season with salt and pepper.
  4. Spread the mixture evenly into the prepared baking dish.
  5. Top with the remaining cheddar cheese.
  6. Bake for 25-30 minutes, or until the cheese is melted and bubbly.
  7. Let the casserole cool for 5 minutes, then garnish with extra bacon and green onions before serving.
