- 1 lb pork sausage (hot or mild)
- 8 oz cream cheese (softened)
- 1 can (10 oz) Rotel diced tomatoes with green chilies
- 2 cups shredded cheddar cheese
- 1 ½ cups Bisquick baking mix
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon black pepper

- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In a large mixing bowl, combine the sausage, cream cheese, Rotel, shredded cheddar cheese, garlic powder, salt, and pepper. Stir until everything is well combined.
- Gradually add the Bisquick baking mix, mixing with your hands or a spoon until the dough comes together and is easy to form.
- Use a small cookie scoop or your hands to shape the mixture into 1-inch balls and place them onto the prepared baking sheets, spaced evenly apart.
- Bake for 20-25 minutes, or until golden brown and cooked through.
- Allow to cool slightly before serving. Enjoy!
