- 5 pounds sweet potatoes, peeled and cut into 1-inch cubes
- 1 cup brown sugar
- 1/2 cup unsalted butter, melted
- 1/4 cup maple syrup
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 400°F (200°C).
- Peel the sweet potatoes and cut them into 1-inch cubes. Arrange them on a large baking sheet, ensuring they don’t touch each other too much.
- Drizzle melted butter or olive oil over the sweet potatoes. Sprinkle with a pinch of salt and pepper.
- Bake for 20-25 minutes, flipping halfway through, until the sweet potatoes are tender.
- While the sweet potatoes are baking, prepare the candy glaze by combining brown sugar, melted butter, and a bit of water or orange juice in a saucepan. Heat over medium heat, stirring occasionally, until it thickens and becomes syrupy.
- Once the sweet potatoes are done, remove them from the oven and brush them generously with the candy glaze. Return them to the oven and bake for an additional 10-15 minutes, basting occasionally until golden and caramelized.
- When the sweet potatoes are golden, shiny, and caramelized, remove from the oven. Serve warm and enjoy!
