- 1 pound ground beef
- 4 cups diced potatoes (russet or all-purpose)
- 1 onion, diced
- 3 cups chicken or beef broth
- 1 cup heavy cream
- 2 tablespoons butter
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cloves garlic, minced
- 1 teaspoon thyme (optional)
- 1 teaspoon oregano (optional)
Instructions
- Heat a large pot or Dutch oven over medium-high heat. Add the ground beef and cook until fully browned, breaking it apart as it cooks. Drain any excess fat.
- Add the diced onion and minced garlic to the pot. Cook until the onions are softened and the garlic is fragrant.
- Add the diced potatoes and broth to the pot. Bring to a boil, then reduce the heat to low and cover. Let it simmer for 20-25 minutes, or until the potatoes are soft.
- Mash some of the potatoes against the side of the pot to help thicken the soup, or use an immersion blender for a creamier texture.
- Stir in the heavy cream, butter, salt, and pepper. Let the soup simmer for an additional 5-10 minutes.
- Taste the soup and adjust the seasonings if needed.
