Easy Delicious Hamburger Potato Soup Recipe

  • 1 pound ground beef
  • 4 cups diced potatoes (russet or all-purpose)
  • 1 onion, diced
  • 3 cups chicken or beef broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cloves garlic, minced
  • 1 teaspoon thyme (optional)
  • 1 teaspoon oregano (optional)

Instructions

  1. Heat a large pot or Dutch oven over medium-high heat. Add the ground beef and cook until fully browned, breaking it apart as it cooks. Drain any excess fat.
  2. Add the diced onion and minced garlic to the pot. Cook until the onions are softened and the garlic is fragrant.
  3. Add the diced potatoes and broth to the pot. Bring to a boil, then reduce the heat to low and cover. Let it simmer for 20-25 minutes, or until the potatoes are soft.
  4. Mash some of the potatoes against the side of the pot to help thicken the soup, or use an immersion blender for a creamier texture.
  5. Stir in the heavy cream, butter, salt, and pepper. Let the soup simmer for an additional 5-10 minutes.
  6. Taste the soup and adjust the seasonings if needed.
