Ingredients
Scale
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1 cup unsalted butter, softened to room temperature
- 2 large eggs
- 2 cans cherry pie filling (or fresh cherries)
- 1/4 cup granulated sugar (for cherry filling)
- 2 tablespoons all-purpose flour (for cherry filling)
- Powdered sugar (for dusting, optional)
Instructions
- Prepare the oven and pan: Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- Make the shortbread dough: In a medium bowl, combine 2 cups of flour, 1 cup of sugar, and 1 teaspoon of baking powder. Whisk to mix well.
- Add 1 cup of softened butter and 2 large eggs. Use a hand mixer or fork to blend until the dough is crumbly.
- Press dough into the pan: Press two-thirds of the dough into the prepared baking pan to form an even base.
- Prepare the cherry filling: In a separate bowl, combine 2 cans of cherry pie filling, 1/4 cup sugar, and 2 tablespoons of flour. Stir until the mixture is well combined.
- Assemble the bars: Spread the cherry filling evenly over the dough base in the pan. Crumble the remaining dough on top, creating a streusel-like topping.
- Bake the bars: Bake for 30-35 minutes or until the top is golden and the filling is bubbly.
- Cool and serve: Allow the bars to cool completely before cutting into squares. Dust with powdered sugar if desired.
