For the Crust:
- 24 Oreo cookies (filling included)
- 4 tablespoons unsalted butter, melted
For the Filling:
- 1 cup heavy cream
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon peppermint extract
- 4 oz white chocolate, melted and cooled
- 1/4 cup crushed candy canes
For Garnish:
- Additional crushed candy canes
- Shaved dark or white chocolate
- Whipped cream (optional)
Instructions
- Prepare the Crust:
- Crush the Oreo cookies into fine crumbs using a food processor or by placing them in a sealed bag and crushing them with a rolling pin.
- Mix the cookie crumbs with melted butter until evenly coated.
- Press the mixture firmly into the bottom and sides of a 9-inch pie dish. Use the back of a measuring cup to press it evenly. Refrigerate while you prepare the filling.
- Make the Filling:
- In a large mixing bowl, whip the heavy cream until stiff peaks form. Set aside.
- In another bowl, beat the softened cream cheese with powdered sugar until smooth and creamy.
- Add the peppermint extract and melted white chocolate to the cream cheese mixture. Mix well.
- Gently fold in the whipped cream until the filling is light and fluffy. Stir in the crushed candy canes for a festive crunch.
- Assemble the Pie:
- Pour the peppermint filling into the chilled Oreo crust. Spread it evenly with a spatula.
- Cover the pie with plastic wrap and refrigerate for at least 4 hours, or until set.
- Decorate and Serve:
- Before serving, garnish the pie with crushed candy canes, shaved chocolate, and swirls of whipped cream if desired.
