Loaded Mashed Potato Meatloaf Casserole Recipe

  • For the Meatloaf Base:
    • 1 lb ground beef
    • 1/2 lb ground pork
    • 1/2 cup breadcrumbs
    • 1 egg
    • 1 small onion, finely diced
    • 2 cloves garlic, minced
    • 1/4 cup milk
    • 1 tsp Worcestershire sauce
    • 1 tsp dried parsley
    • Salt and pepper to taste
  • For the Mashed Potatoes:
    • 4 medium Yukon Gold or Russet potatoes, peeled and cubed
    • 1/2 cup heavy cream, warmed
    • 4 tbsp unsalted butter, melted
    • 1/4 cup freshly grated Parmesan cheese
    • Salt and pepper to taste
  • Toppings:
    • 1/2 cup shredded cheddar cheese
    • 1/4 cup crumbled cooked bacon
    • 1 tbsp chopped fresh parsley for garnish

Instructions

  1. Prepare the Meatloaf Base:
    • Preheat the oven to 375°F (190°C).
    • In a large bowl, combine the ground beef, ground pork, breadcrumbs, egg, onion, garlic, milk, Worcestershire sauce, parsley, salt, and pepper. Mix until just combined.
    • Press the meatloaf mixture into an even layer in a greased 9×9-inch baking dish.
  2. Bake the Meatloaf:
    • Bake the meatloaf for 20-25 minutes until partially cooked.
  3. Prepare the Mashed Potatoes:
    • While the meatloaf bakes, boil the potatoes in salted water for 15-20 minutes, or until tender.
    • Drain and mash the potatoes. Add the warmed heavy cream, melted butter, Parmesan cheese, salt, and pepper. Whip until smooth and creamy.
  4. Assemble the Casserole:
    • Remove the meatloaf from the oven. Spread the mashed potatoes evenly over the top of the meatloaf layer.
    • Sprinkle the cheddar cheese and crumbled bacon over the mashed potatoes.
  5. Bake the Casserole:
    • Return the dish to the oven and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.
    • Let cool for 5 minutes, garnish with chopped parsley, and serve hot.
