- For the Meatloaf Base:
- 1 lb ground beef
- 1/2 lb ground pork
- 1/2 cup breadcrumbs
- 1 egg
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1/4 cup milk
- 1 tsp Worcestershire sauce
- 1 tsp dried parsley
- Salt and pepper to taste
- For the Mashed Potatoes:
- 4 medium Yukon Gold or Russet potatoes, peeled and cubed
- 1/2 cup heavy cream, warmed
- 4 tbsp unsalted butter, melted
- 1/4 cup freshly grated Parmesan cheese
- Salt and pepper to taste
- Toppings:
- 1/2 cup shredded cheddar cheese
- 1/4 cup crumbled cooked bacon
- 1 tbsp chopped fresh parsley for garnish
Instructions
- Prepare the Meatloaf Base:
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the ground beef, ground pork, breadcrumbs, egg, onion, garlic, milk, Worcestershire sauce, parsley, salt, and pepper. Mix until just combined.
- Press the meatloaf mixture into an even layer in a greased 9×9-inch baking dish.
- Bake the Meatloaf:
- Bake the meatloaf for 20-25 minutes until partially cooked.
- Prepare the Mashed Potatoes:
- While the meatloaf bakes, boil the potatoes in salted water for 15-20 minutes, or until tender.
- Drain and mash the potatoes. Add the warmed heavy cream, melted butter, Parmesan cheese, salt, and pepper. Whip until smooth and creamy.
- Assemble the Casserole:
- Remove the meatloaf from the oven. Spread the mashed potatoes evenly over the top of the meatloaf layer.
- Sprinkle the cheddar cheese and crumbled bacon over the mashed potatoes.
- Bake the Casserole:
- Return the dish to the oven and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.
- Let cool for 5 minutes, garnish with chopped parsley, and serve hot.
