- 1 lb steak (ribeye, sirloin, or filet mignon), cut into 1-inch cubes
- 1 lb Yukon Gold or red potatoes, cubed
- 3 tbsp olive oil, divided
- 3 tbsp unsalted butter
- 4 cloves garlic, minced
- 2 tbsp fresh parsley, chopped
- 1 tsp paprika
- 1 tsp salt, divided
- ½ tsp black pepper, divided
Instructions
- Prepare the Potatoes:
- Preheat the oven to 400°F.
- In a large bowl, toss the cubed potatoes with 2 tbsp olive oil, paprika, ½ tsp salt, and ¼ tsp black pepper.
- Spread the potatoes evenly on a baking sheet and roast for 20-25 minutes, or until tender and crispy.
- Cook the Steak Bites:
- Heat 1 tbsp olive oil in a large skillet over medium-high heat.
- Season the steak cubes with ½ tsp salt and ¼ tsp black pepper.
- Sear the steak bites in the skillet for 2-3 minutes per side until browned. Remove and set aside.
- Make the Garlic Butter Sauce:
- In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes, until fragrant. Stir in the chopped parsley.
- Combine and Serve:
- Add the roasted potatoes and seared steak bites back into the skillet. Toss everything to coat in the garlic butter sauce.
- Serve hot with additional parsley for garnish.
