For the Cheesecake Filling:

- ½ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ¼ cup sour cream
- 1 cup fresh strawberries, pureed
For the Fresh Strawberry Topping:
- 2 cups fresh strawberries, hulled and sliced
- ¼ cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
Instructions
1. Prepare the Graham Cracker Crust:
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Stir until evenly moistened.
- Press the mixture firmly into a 9×13-inch baking pan to create an even layer.
- Bake for 10 minutes. Remove from the oven and allow the crust to cool while preparing the filling.
2. Make the Cheesecake Filling:
- In a large mixing bowl, beat the cream cheese until smooth and creamy.
- Gradually add the sugar and mix until fully combined.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract and sour cream until the mixture is smooth.
- Gently fold in the pureed strawberries, ensuring an even distribution.
3. Assemble and Bake the Cheesecake Bars:
- Pour the cheesecake filling over the cooled graham cracker crust, spreading it evenly.
- Reduce the oven temperature to 325°F (163°C).
- Bake for 35-40 minutes, or until the center is set and slightly jiggles when the pan is shaken.
- Allow the bars to cool completely at room temperature, then refrigerate for at least 2 hours or overnight for best results.
4. Prepare the Strawberry Topping:
- In a saucepan, combine sliced strawberries and sugar. Cook over medium heat, stirring occasionally, until the mixture thickens (about 10-15 minutes).
- Stir in lemon juice and vanilla extract. Let the sauce cool completely before using.
5. Finish and Serve:
- Spread or drizzle the cooled strawberry topping over the chilled cheesecake bars.
- Use a sharp knife to slice into bars, wiping the knife clean between cuts for neat edges.
- Serve chilled and enjoy!
