For the Cookie Base:

For the Cheesecake Frosting (Optional):
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
- 1–2 tablespoons milk, as needed
Instructions
1. Prepare the Cookie Dough:
- Preheat your oven to 350°F and line baking sheets with parchment paper.
- In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Gradually mix in the flour, baking soda, and a pinch of salt. Stir until the dough is just combined.
2. Prepare the Cheesecake Filling:
- In a separate bowl, beat the cream cheese until smooth.
- Add powdered sugar, vanilla extract, and sour cream. Mix until well combined and creamy.
3. Assemble the Cookies:
- Scoop the cookie dough into large balls and place them on the prepared baking sheet.
- Using the back of a spoon or your thumb, create a small well in the center of each dough ball.
- Fill each well with the cheesecake filling, ensuring it doesn’t overflow.
4. Bake the Cookies:
- Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are golden brown and the centers are set.
- Remove the cookies from the oven and let them cool completely on a wire rack.
5. Add Salted Caramel Drizzle:
- Once the cookies have cooled, drizzle the salted caramel sauce generously over each cookie.
6. (Optional) Prepare and Add Cheesecake Frosting:
- Beat the softened cream cheese and butter together until smooth.
- Gradually add powdered sugar and vanilla extract, mixing well.
- Add milk, 1 tablespoon at a time, until the frosting reaches a spreadable consistency.
- Pipe or spread the frosting onto the cookies before adding the salted caramel drizzle for an extra indulgent touch.
