Delicious Bang Bang Chicken Sliders Recipe

  • 1 lb boneless chicken thighs
  • 1 cup cornstarch
  • ½ cup mayonnaise
  • ¼ cup sweet chili sauce
  • 2 tablespoons sriracha (adjust for spice preference)
  • Slider buns
  • 1 cup shredded lettuce
  • Fresh cilantro leaves
  • Optional: Cucumber slices, sliced jalapeños
  • Salt and pepper, to taste

Instructions

  1. Marinate the Chicken: In a mixing bowl, combine mayonnaise, sweet chili sauce, sriracha, and a pinch of salt and pepper. Add the chicken thighs and coat well. Cover and refrigerate for 1 hour.
  2. Prepare for Frying: Heat a frying pan with enough oil to submerge the chicken to about 350°F. Remove the chicken from the marinade and coat each piece in cornstarch, ensuring an even layer.
  3. Fry the Chicken: Carefully place the chicken in the hot oil and fry for 5-7 minutes per side, or until golden brown and crispy. Remove and place on paper towels to drain excess oil.
  4. Toast the Buns: While the chicken rests, toast the slider buns in a dry skillet or in the oven until golden brown.
  5. Assemble the Sliders: Place a piece of fried chicken on each bun base. Top with shredded lettuce, fresh cilantro, and optional cucumber slices or jalapeños. Drizzle with spicy mayo and place the bun top.
  6. Serve: Plate the sliders and serve immediately while warm.
