- 1 lb boneless chicken thighs
- 1 cup cornstarch
- ½ cup mayonnaise
- ¼ cup sweet chili sauce
- 2 tablespoons sriracha (adjust for spice preference)
- Slider buns
- 1 cup shredded lettuce
- Fresh cilantro leaves
- Optional: Cucumber slices, sliced jalapeños
- Salt and pepper, to taste
Instructions
- Marinate the Chicken: In a mixing bowl, combine mayonnaise, sweet chili sauce, sriracha, and a pinch of salt and pepper. Add the chicken thighs and coat well. Cover and refrigerate for 1 hour.
- Prepare for Frying: Heat a frying pan with enough oil to submerge the chicken to about 350°F. Remove the chicken from the marinade and coat each piece in cornstarch, ensuring an even layer.
- Fry the Chicken: Carefully place the chicken in the hot oil and fry for 5-7 minutes per side, or until golden brown and crispy. Remove and place on paper towels to drain excess oil.
- Toast the Buns: While the chicken rests, toast the slider buns in a dry skillet or in the oven until golden brown.
- Assemble the Sliders: Place a piece of fried chicken on each bun base. Top with shredded lettuce, fresh cilantro, and optional cucumber slices or jalapeños. Drizzle with spicy mayo and place the bun top.
- Serve: Plate the sliders and serve immediately while warm.
