Instructions

  1. Prepare the Dough:

    • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
    • In a large mixing bowl, use a hand or stand mixer to cream the softened butter and sugar until light and fluffy, about 2-3 minutes.
    • Add the egg, vanilla extract, and almond extract (if using). Mix until well combined.
    • Gradually add the dry ingredients to the wet ingredients, mixing just until a soft dough forms.
  2. Shape the Cookies:
    • Use a tablespoon or cookie scoop to portion the dough. Roll each scoop into a ball and place it on the prepared baking sheets, spacing them about 2 inches apart.
    • For a festive touch, roll the dough balls in colored sugar or sprinkles before baking.
  3. Bake:
    • Bake for 8-10 minutes, or until the edges are lightly golden and the centers look slightly underbaked.
    • Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
