  • 1 lb fresh green beans, trimmed and rinsed
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 2 tablespoons brown sugar
  • 1 tablespoon sesame oil
  • 4 slices crispy bacon, chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: sesame seeds, toasted pecans, minced garlic, lemon zest, or a sweet glaze like teriyaki or apricot

Instructions

  1. Blanch the Green Beans:
    Bring a pot of water to a boil and add the green beans. Blanch them for 2-3 minutes, then immediately transfer them to an ice bath to stop the cooking process.
  2. Prepare the Sauce:
    In a small bowl, mix the soy sauce, rice vinegar, brown sugar, and sesame oil. Stir until the sugar dissolves completely and the mixture is smooth.
  3. Cook the Bacon:
    In a large skillet, cook the chopped bacon over medium heat until it becomes crispy. Remove it from the pan and set aside, leaving some bacon grease in the skillet.
  4. Cook the Green Beans:
    In the same skillet, heat the sauce mixture. Add the blanched green beans and toss them gently until they’re well-coated in the sauce. Let them cook for 5-7 minutes, stirring occasionally.
  5. Add the Bacon and Optional Ingredients:
    Stir in the crispy bacon and any additional flavor enhancers like sesame seeds, minced garlic, or lemon zest.
  6. Serve:
