  • 3/4 cup unsalted butter, softened
  • 3/4 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/3 cup molasses
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the Batter:
    • Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan and line it with parchment paper for easy removal.
    • In a medium bowl, whisk together the flour, baking soda, ginger, cinnamon, nutmeg, cloves, and salt. Set aside.
  2. Mix the Wet Ingredients:
    • In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy, about 2-3 minutes.
    • Add the egg, molasses, and vanilla extract. Mix until well combined.
  3. Combine Wet and Dry Ingredients:
    • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix to keep the bars tender.
  4. Bake the Bars:
    • Spread the dough evenly into the prepared baking pan. Smooth the top with a spatula.
    • Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
    • Remove from the oven and let the bars cool completely in the pan before cutting into squares.
