  • 1 sheet puff pastry, thawed
  • 4 slices of ham (prosciutto or French ham recommended)
  • 1 cup shredded Gruyère cheese
  • 4 large eggs
  • 1 egg yolk (for egg wash)
  • Salt and pepper to taste
  • 1 tablespoon chopped fresh chives (optional)

Optional Add-Ins:

  • Sliced tomatoes
  • Spinach leaves
  • Dijon mustard for spreading

Instructions

  1. Prepare the Puff Pastry:
    • Preheat the oven to 400°F (200°C).
    • Roll out the puff pastry on a floured surface to make it slightly thinner.
    • Cut the pastry into 8 equal rectangles for 4 servings.
  2. Assemble the Croque Madame Base:
    • Place 4 puff pastry rectangles on a baking sheet lined with parchment paper.
    • Layer each rectangle with a slice of ham and shredded Gruyère cheese.
    • Top with another puff pastry rectangle and press the edges lightly to seal.
  3. Apply Egg Wash:
    • Beat the egg yolk with a splash of water. Brush the tops of the pastry with the egg wash to ensure a golden finish.
  4. Bake the Pastry:
    • Bake in the preheated oven for 15-20 minutes or until the pastry is puffed and golden.
  5. Prepare the Eggs:
    • While the pastries bake, fry the eggs sunny-side-up in a non-stick skillet. Season with salt and pepper.
  6. Assemble the Croque Madame:
    • Once the pastries are baked, let them cool for a few minutes.
    • Top each pastry with a fried egg and sprinkle with fresh chives if desired.
  7. Serve and Enjoy:
    • Serve the Puff Pastry Croque Madame warm, with a side salad or fresh fruit for a complete brunch experience.
