- 1 cup shredded Gruyère cheese
- 4 large eggs
- 1 egg yolk (for egg wash)
- Salt and pepper to taste
- 1 tablespoon chopped fresh chives (optional)

Instructions
- Prepare the Puff Pastry:
- Preheat the oven to 400°F (200°C).
- Roll out the puff pastry on a floured surface to make it slightly thinner.
- Cut the pastry into 8 equal rectangles for 4 servings.
- Assemble the Croque Madame Base:
- Place 4 puff pastry rectangles on a baking sheet lined with parchment paper.
- Layer each rectangle with a slice of ham and shredded Gruyère cheese.
- Top with another puff pastry rectangle and press the edges lightly to seal.
- Apply Egg Wash:
- Beat the egg yolk with a splash of water. Brush the tops of the pastry with the egg wash to ensure a golden finish.
- Bake the Pastry:
- Bake in the preheated oven for 15-20 minutes or until the pastry is puffed and golden.
- Prepare the Eggs:
- While the pastries bake, fry the eggs sunny-side-up in a non-stick skillet. Season with salt and pepper.
- Assemble the Croque Madame:
- Once the pastries are baked, let them cool for a few minutes.
- Top each pastry with a fried egg and sprinkle with fresh chives if desired.
- Serve and Enjoy:
- Serve the Puff Pastry Croque Madame warm, with a side salad or fresh fruit for a complete brunch experience.
