  • 1 lb baby potatoes, halved

  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • Fresh parsley, chopped (for garnish)

Optional Add-Ins:

  • 1 teaspoon smoked paprika for a smoky flavor
  • 1 teaspoon red pepper flakes for a bit of heat
  • 1 cup carrots or green beans for added veggies

Instructions

  1. Prepare the Ingredients:
    • Cut the beef into bite-sized pieces and pat dry with paper towels.
    • Halve the baby potatoes and set them aside.
  2. Mix the Garlic Butter:
    • In a small bowl, combine the melted butter, minced garlic, salt, pepper, paprika, and thyme. Stir until well mixed.
  3. Coat the Beef:
    • Add the beef pieces to the garlic butter mixture, tossing to coat evenly.
  4. Assemble in the Slow Cooker:
    • Place the coated beef bites in the slow cooker. Arrange the halved potatoes around the beef.
    • Pour the beef broth over the top to keep everything moist and flavorful.
    • Drizzle any remaining garlic butter over the beef and potatoes.
  5. Cook:
    • Cover the slow cooker with a lid and cook on low for 6-8 hours or high for 3-4 hours, until the beef is tender and the potatoes are soft.
