Instructions
- Prepare the Ingredients:
- Cut the beef into bite-sized pieces and pat dry with paper towels.
- Halve the baby potatoes and set them aside.
- Mix the Garlic Butter:
- In a small bowl, combine the melted butter, minced garlic, salt, pepper, paprika, and thyme. Stir until well mixed.
- Coat the Beef:
- Add the beef pieces to the garlic butter mixture, tossing to coat evenly.
- Assemble in the Slow Cooker:
- Place the coated beef bites in the slow cooker. Arrange the halved potatoes around the beef.
- Pour the beef broth over the top to keep everything moist and flavorful.
- Drizzle any remaining garlic butter over the beef and potatoes.
- Cook:
- Cover the slow cooker with a lid and cook on low for 6-8 hours or high for 3-4 hours, until the beef is tender and the potatoes are soft.
- Garnish and Serve:
- Once cooked, sprinkle fresh parsley over the beef and potatoes.
