- 1 cup (2 sticks) unsalted butter, softened
- 3/4 cup granulated sugar
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract (optional)
- Your favorite filling (jam, Nutella, lemon curd, etc.)
- Powdered sugar (optional, for dusting)
Instructions
- Preheat the oven to 350°F (175°C). Line your baking sheets with parchment paper.
- In a large mixing bowl, cream the butter and sugar together until light and fluffy, about 2-3 minutes.
- Add the vanilla extract (if using) and mix well. Then, add the egg and mix until combined.
- In another bowl, whisk together the flour, salt, and baking powder. Slowly add the dry ingredients to the wet mixture and stir until a soft dough forms.
- Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheets.
- Gently press your thumb into the center of each cookie to create a small indentation. Be careful not to press too deeply.
- Fill each indentation with your preferred jam, Nutella, or lemon curd.
- Bake for 12-15 minutes, or until the edges are lightly golden.
- Let the cookies cool completely on a wire rack. Optionally, dust with powdered sugar before serving.
