Soft Christmas Thumbprint Cookies Recipe That Melts

  • 1 cup (2 sticks) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract (optional)
  • Your favorite filling (jam, Nutella, lemon curd, etc.)
  • Powdered sugar (optional, for dusting)

Instructions

  1. Preheat the oven to 350°F (175°C). Line your baking sheets with parchment paper.
  2. In a large mixing bowl, cream the butter and sugar together until light and fluffy, about 2-3 minutes.
  3. Add the vanilla extract (if using) and mix well. Then, add the egg and mix until combined.
  4. In another bowl, whisk together the flour, salt, and baking powder. Slowly add the dry ingredients to the wet mixture and stir until a soft dough forms.
  5. Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheets.
  6. Gently press your thumb into the center of each cookie to create a small indentation. Be careful not to press too deeply.
  7. Fill each indentation with your preferred jam, Nutella, or lemon curd.
  8. Bake for 12-15 minutes, or until the edges are lightly golden.
  9. Let the cookies cool completely on a wire rack. Optionally, dust with powdered sugar before serving.
