Essential Ingredients:
- 1 whole chicken (or 1.5 lbs of chicken thighs), cut into pieces
- 3 large carrots, peeled and diced
- 4 medium potatoes, peeled and cubed
- 1 large onion, finely chopped
- 4 garlic cloves, minced
- 6 cups chicken broth
- 1 cup diced tomatoes (canned or fresh)
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- ½ teaspoon garlic powder
- 2 sprigs fresh thyme
- 1 sprig fresh rosemary
- Salt and pepper to taste
Optional Add-ins for Extra Magic:
- 1 cup kale or spinach, roughly chopped
- ½ cup pumpkin puree
- 1 cup cooked beans (kidney or black beans)
- ¼ cup dried cranberries (for a sweet-tart twist)
- A pinch of red pepper flakes for heat
Instructions
Step 1: Prepare Your Ingredients
- Wash and chop all vegetables (carrots, potatoes, onions).
- Marinate the chicken pieces with olive oil, smoked paprika, cumin, garlic powder, salt, and pepper. Let it sit for 15–20 minutes.
Step 2: Cooking on the Stove
- In a large pot, heat a tablespoon of olive oil over medium heat.
- Add the marinated chicken and brown on both sides, about 4–5 minutes per side. Remove and set aside.
- In the same pot, sauté onions and garlic until fragrant, about 2 minutes.
- Add the carrots, potatoes, and any additional vegetables (like kale or beans). Stir well.
- Pour in the chicken broth and diced tomatoes. Bring to a gentle boil.
- Return the browned chicken to the pot, along with thyme and rosemary. Reduce the heat and let it simmer for 1.5–2 hours, stirring occasionally.
Step 3: Using an Instant Pot
- Set the Instant Pot to sauté mode and follow the same steps to brown the chicken and sauté the onions and garlic.
- Add the remaining ingredients, including broth and seasonings. Seal the lid and set to pressure cook on high for 25 minutes.
- Once done, release the pressure carefully. Stir and adjust seasoning as needed.
Step 4: Serve
- Remove the chicken and shred it if desired. Return the shredded chicken to the stew.
- Serve hot in bowls, garnished with fresh herbs or a sprinkle of red pepper flakes for extra warmth.
