- 1 red bell pepper, diced
- ½ small red onion, diced
- 3 cloves garlic, minced
- 8 ounces feta cheese
- 4 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon sea salt
- ½ teaspoon dried thyme
- ½ teaspoon ground black pepper
- ½ teaspoon red pepper flakes
- 1 cup chopped baby spinach
- 4 large eggs
- Optional for topping – chopped fresh basil or fresh chives
Instructions
1. Prepare the Oven and Baking Dishes: Setting the Stage for Baking
- Preheat Oven: Preheat your oven to 400°F (200°C).
- Prepare Dishes:
- Ramekins: If using individual ramekins, divide the tomatoes, diced bell pepper, diced red onion, minced garlic, and crumbled feta cheese evenly among 4 oven-safe dishes. Drizzle a tablespoon of olive oil over each dish.
- Large Dish: If using one large baking dish, combine the tomatoes, diced bell pepper, diced red onion, and minced garlic in the dish. Place the block of feta cheese in the center. Drizzle the olive oil over the feta and vegetables.
2. Prepare the Spice Mixture: Combining the Flavors
- Combine Spices: In a small bowl, combine the dried oregano, salt, dried thyme, black pepper, and red pepper flakes.
- Stir: Stir the spices together until they are well blended.
3. Season the Vegetables and Feta: Adding Flavor to Every Layer
- Sprinkle Seasonings: Sprinkle the spice mixture evenly over the feta cheese and vegetables in the ramekins or the large baking dish.
4. Bake the Vegetables and Feta: Creating a Flavorful Base
- Place Ramekins on Baking Sheet (if using): If you’re using individual ramekins, place them on a baking sheet before putting them in the oven. This makes it easier to transfer them and catches any potential spills.
- Bake: Place the baking sheet with the ramekins or the large baking dish directly in the preheated oven. Bake for 25 minutes.
5. Incorporate Spinach and Eggs: Completing the Dish
- Remove from Oven: Carefully remove the dishes from the oven.
- Stir: Stir the contents of each dish to combine the feta cheese evenly with the vegetables.
- Add Spinach: Add the chopped baby spinach to each dish and stir until combined.
- Create Wells: Using a spoon, create a well in the middle of each ramekin (or four wells in the large baking dish).
- Crack Eggs: Carefully crack one egg into each well.
6. Bake Again: Cooking the Eggs to Perfection
- Return to Oven: Place the dishes back in the oven.
- Bake: Bake for an additional 10 minutes, or until the egg whites are set and the yolks are cooked to your liking.
7. Garnish and Serve: The Final Touches
- Garnish: Remove the dishes from the oven and garnish with optional chopped fresh herbs, such as basil or chives.
- Serve: Serve immediately with crusty baguette slices, toast, or pita bread for dipping.
