- 1 pound ground beef
- 1 packet taco seasoning (or homemade seasoning)
- 1/4 cup chicken broth
- 6 flour or corn tortillas
- 1 cup red enchilada sauce
- 1 cup shredded cheddar cheese
- 1 cup shredded pepper jack cheese
- 1/2 cup diced onion
- 1/2 cup diced bell peppers
- Optional toppings: sour cream, chopped cilantro, diced avocado, sliced jalapeños
Instructions
- Prepare the Beef Filling:
- Heat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it into small pieces.
- Drain excess fat, then stir in taco seasoning and chicken broth. Simmer for 2-3 minutes.
- Layer the Casserole:
- Preheat your oven to 350°F.
- Spread a thin layer of enchilada sauce at the bottom of a baking dish.
- Place a tortilla over the sauce, followed by a layer of beef, a sprinkle of onions and bell peppers, and a layer of cheese.
- Repeat the layers (sauce, tortilla, beef, veggies, cheese) until all ingredients are used, finishing with a generous layer of cheese on top.
- Bake the Casserole:
- Cover the baking dish with foil and bake for 20 minutes.
- Remove the foil and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.
- Serve and Enjoy:
- Let the casserole rest for 5 minutes before slicing. Add your favorite toppings like sour cream, cilantro, or avocado, and serve warm.
