  • 1 packet taco seasoning (or homemade seasoning)
  • 1/4 cup chicken broth
  • 6 flour or corn tortillas
  • 1 cup red enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded pepper jack cheese
  • 1/2 cup diced onion
  • 1/2 cup diced bell peppers
  • Optional toppings: sour cream, chopped cilantro, diced avocado, sliced jalapeños

Instructions

  1. Prepare the Beef Filling:
    • Heat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it into small pieces.
    • Drain excess fat, then stir in taco seasoning and chicken broth. Simmer for 2-3 minutes.
  2. Layer the Casserole:
    • Preheat your oven to 350°F.
    • Spread a thin layer of enchilada sauce at the bottom of a baking dish.
    • Place a tortilla over the sauce, followed by a layer of beef, a sprinkle of onions and bell peppers, and a layer of cheese.
    • Repeat the layers (sauce, tortilla, beef, veggies, cheese) until all ingredients are used, finishing with a generous layer of cheese on top.
  3. Bake the Casserole:
    • Cover the baking dish with foil and bake for 20 minutes.
    • Remove the foil and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.
  4. Serve and Enjoy:
    • Let the casserole rest for 5 minutes before slicing. Add your favorite toppings like sour cream, cilantro, or avocado, and serve warm.
