- Little Smokies: 2 packages (approximately 28 oz)
- Bacon: 1 pound (cut into 1-inch wide strips)
- Brown Sugar: 1 cup
- Black Pepper (optional): 1 teaspoon
- Cayenne Pepper (optional): A pinch for heat
1. Prepare the Bacon:
- Slice the bacon into strips about 1 inch wide.
- For crispier bacon, partially cook the strips in a skillet over medium heat for 2–3 minutes. Set aside to cool slightly.
2. Roll the Smokies:
- Place a strip of bacon on a clean surface.
- Position a little smokie at one end of the bacon and roll it tightly.
- Sprinkle a small amount of brown sugar on the bacon before rolling for extra sweetness.
- Secure the roll with a toothpick to hold it in place.
3. Arrange and Coat:
- Preheat the oven to 375°F (190°C).
- Line a baking sheet with parchment paper or aluminum foil for easy cleanup.
- Place the bacon-wrapped smokies seam-side down on the baking sheet.
- Sprinkle the remaining brown sugar evenly over the wrapped smokies. Add black pepper or cayenne for additional flavor, if desired.
4. Bake to Perfection:
- Bake in the preheated oven for 20–25 minutes, or until the bacon is crispy and the brown sugar has caramelized.
- Rotate the baking sheet halfway through cooking to ensure even caramelization.
5. Serve and Enjoy:
- Allow the smokies to cool slightly before serving.
- Serve warm with toothpicks for easy grabbing.
