Cheesy Loaded Meatloaf Casserole with Veggies

  • 2 pounds ground beef or turkey
  • 1 cup breadcrumbs
  • ½ cup milk
  • ¼ cup ketchup
  • 1 egg
  • 1 teaspoon Worcestershire sauce
  • 1 onion, finely chopped
  • 1 cup bell peppers, diced
  • 2 cups mixed vegetables (like peas and carrots)
  • 2 cups shredded cheese (cheddar, mozzarella, or a mix)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine ground meat, breadcrumbs, milk, ketchup, egg, Worcestershire sauce, salt, and pepper. Mix gently until well combined.
  3. Lightly grease a baking dish and press the meat mixture into an even layer.
  4. Spread diced bell peppers and mixed vegetables over the meat layer.
  5. Top generously with shredded cheese.
  6. Cover the dish with aluminum foil and bake for 1 hour.
  7. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.
  8. Let the casserole rest for 5-10 minutes before serving.
