  • Author: Jessica

Description

Learn how to make this easy and delicious Garlic Parmesan Chicken and Potatoes Skillet! This one-pan recipe features crispy potatoes, juicy chicken, and a flavorful garlic parmesan sauce, all topped with melted mozzarella cheese.

Ingredients

Scale
  • 2 boneless, skinless chicken breasts (about 2 ½ pounds), cubed
  • 45 small/medium-sized potatoes, peeled and cubed
  • Olive oil (for tossing the potatoes)
  • Salt, pepper, garlic powder, paprika (for seasoning potatoes)
  • 2 tablespoons butter
  • ½ teaspoon each of salt and pepper (for seasoning chicken)
  • 1 teaspoon each of paprika, onion powder, and Italian seasoning
  • 2 tablespoons minced garlic
  • Buffalo Wild Wings Garlic Parmesan Sauce (or similar), as desired
  • 1 cup shredded mozzarella cheese

Instructions

1. Prepare the Potatoes: Crispy, Seasoned Perfection

  1. Wash and Peel: Wash and peel the potatoes.
  2. Cube: Cut the potatoes into small, bite-sized cubes (about ½-inch).
  3. Toss with Oil and Seasonings: In a large bowl, toss the cubed potatoes with a drizzle of olive oil, salt, pepper, garlic powder, and paprika. Ensure the potatoes are evenly coated.

2. Cook the Potatoes: Air Fryer Magic

  1. Preheat Air Fryer: Preheat your air fryer to 400°F (200°C).
  2. Add Potatoes: Place the seasoned potato cubes in the air fryer basket in a single layer (or as close to a single layer as your air fryer will allow).
    • Tip: Don’t overcrowd the basket, as this will prevent the potatoes from crisping up properly. Work in batches if necessary.
  3. Air Fry: Cook for about 20 minutes, shaking the basket a couple of times during cooking to ensure even browning and crispiness.
    • Check for Doneness: The potatoes should be golden brown and crispy on the outside and tender on the inside.

3. Season the Chicken: Building Flavor from the Start

  1. Cube Chicken: While the potatoes are cooking, cut the chicken breasts into small, bite-sized cubes (about 1 inch).
  2. Combine Seasonings: In a medium bowl, combine ½ teaspoon each of salt and pepper, and 1 teaspoon each of paprika, onion powder, and Italian seasoning.
  3. Season Chicken: Add the cubed chicken to the bowl with the seasonings and toss until the chicken is evenly coated.

4. Cook the Chicken: Searing for Tenderness and Flavor

  1. Heat Butter: Heat 2 tablespoons of butter in a large skillet over medium-high heat until melted and shimmering.
  2. Add Chicken: Add the seasoned chicken cubes to the hot skillet.
  3. Cook Through: Cook the chicken, stirring occasionally, until it reaches an internal temperature of 165°F (74°C) and is fully cooked through, with no pink remaining. This should take about 6-8 minutes.

5. Add Garlic and Sauce: Creating the Signature Flavor

  1. Add Garlic: Stir in the minced garlic and cook for about 30 seconds, until fragrant.
  2. Pour in Sauce: Add the Buffalo Wild Wings Garlic Parmesan Sauce (or your preferred brand) to the skillet. Use as much or as little as you like, depending on your preference for sauciness.
  3. Cook and Coat: Cook for an additional 1-2 minutes, stirring constantly, until the chicken is evenly coated with the sauce and the sauce is heated through.

6. Combine Potatoes and Chicken: Bringing it All Together

  1. Add Potatoes: Once the air-fried potatoes are done, add them to the skillet with the cooked chicken and sauce.
  2. Toss: Gently toss everything together until the potatoes are well coated with the sauce.

7. Melt the Cheese: The Final Touch of Gooey Goodness

  1. Sprinkle with Cheese: Sprinkle the shredded mozzarella cheese evenly over the top of the chicken and potato mixture in the skillet.
  2. Melt Cheese: You have two options for melting the cheese:
    • Option 1 (Stovetop): Cover the skillet with a lid and let it sit over low heat for a few minutes until the cheese is melted and bubbly.
    • Option 2 (Broiler): Transfer the skillet to the oven under the broiler for a few minutes. Keep a close eye on it to prevent burning. The cheese should be melted, bubbly, and slightly golden brown.

8. Serve and Enjoy: A Delicious and Satisfying Meal

  1. Serve Hot: Serve the Garlic Parmesan Chicken and Potatoes Skillet hot, directly from the skillet or portioned onto plates.
  2. Garnish (Optional): Garnish with chopped fresh parsley or chives for a pop of color and freshness.
