  • 2 large flour or corn tortillas
  • 1 cup refried beans
  • 1 cup salsa
  • 1 ½ cups shredded cheese (Monterey Jack and mozzarella recommended)
  • 1 cup cooked, seasoned ground beef or shredded chicken
  • Optional toppings: diced onions, sliced jalapeños, chopped cilantro, diced tomatoes, and sour cream

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 400°F (200°C).
  2. Prepare the Base:
    • Place one tortilla on a baking sheet.
    • Spread a layer of refried beans evenly over the tortilla.
    • Top with a layer of salsa, followed by shredded cheese and the seasoned ground beef or chicken.
  3. Layer and Assemble:
    • Place the second tortilla on top of the first layer.
    • Repeat the process: spread refried beans, add salsa, sprinkle cheese, and top with the meat.
  4. Bake:
    • Transfer the assembled Mexican pizza to the oven.
    • Bake for 15-20 minutes, or until the cheese is melted and the tortillas are golden brown.
  5. Add Toppings and Serve:
    • Remove the pizza from the oven and let it cool slightly.
    • Garnish with diced onions, sliced jalapeños, chopped cilantro, and any other desired toppings.
    • Slice and serve warm.
