Garlic Butter Beef Bites and Potatoes:
- 1–2 pounds beef bites (sirloin or ribeye)
- 2–3 large potatoes, peeled and chopped into bite-sized pieces
- 3–4 cloves garlic, minced
- ¼ cup butter, softened
- 1 teaspoon paprika
- ½ teaspoon dried thyme
- Salt and pepper to taste
Optional Additions:
- 1 cup carrots, peeled and chopped
- ½ cup peas or diced bell peppers
Instructions
- Prepare the Ingredients:
- Peel and chop the potatoes into bite-sized pieces.
- Mince the garlic and mix it with softened butter, paprika, thyme, salt, and pepper to create the garlic butter mixture.
- Sear the Beef (Optional for Extra Flavor):
- Heat a skillet over medium-high heat. Lightly sear the beef bites for 1-2 minutes on each side. This step adds depth to the flavor.
- Assemble in the Slow Cooker:
- Add the potatoes, seared beef bites, and optional vegetables (if using) into the slow cooker.
- Pour the garlic butter mixture evenly over the ingredients. Toss gently to coat.
- Cook:
- Set the slow cooker to low and cook for 8-10 hours or on high for 4-6 hours.
- Stir halfway through cooking for even flavor distribution, if possible.
- Serve:
- Once the beef is tender and the potatoes are soft, serve hot. Garnish with fresh parsley if desired.
