Garlic Butter Beef Bites and Potatoes:

  • 12 pounds beef bites (sirloin or ribeye)
  • 23 large potatoes, peeled and chopped into bite-sized pieces
  • 34 cloves garlic, minced
  • ¼ cup butter, softened
  • 1 teaspoon paprika
  • ½ teaspoon dried thyme
  • Salt and pepper to taste

Optional Additions:

  • 1 cup carrots, peeled and chopped
  • ½ cup peas or diced bell peppers

Instructions

  1. Prepare the Ingredients:
    • Peel and chop the potatoes into bite-sized pieces.
    • Mince the garlic and mix it with softened butter, paprika, thyme, salt, and pepper to create the garlic butter mixture.
  2. Sear the Beef (Optional for Extra Flavor):
    • Heat a skillet over medium-high heat. Lightly sear the beef bites for 1-2 minutes on each side. This step adds depth to the flavor.
  3. Assemble in the Slow Cooker:
    • Add the potatoes, seared beef bites, and optional vegetables (if using) into the slow cooker.
    • Pour the garlic butter mixture evenly over the ingredients. Toss gently to coat.
  4. Cook:
    • Set the slow cooker to low and cook for 8-10 hours or on high for 4-6 hours.
    • Stir halfway through cooking for even flavor distribution, if possible.
  5. Serve:
    • Once the beef is tender and the potatoes are soft, serve hot. Garnish with fresh parsley if desired.
