Easy Strawberry Icebox Cake {No Bake} Recipe

  • 1 pound fresh strawberries, sliced
  • 8 ounces cream cheese, softened
  • 1 cup whipped cream (homemade or store-bought)
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 sleeves graham crackers

Instructions

  1. Rinse the strawberries under cold water and pat them dry. Slice them thinly and set aside.
  2. In a mixing bowl, beat the cream cheese until smooth. Add the granulated sugar and vanilla extract, mixing until well combined. Fold in the whipped cream gently until the mixture is light and fluffy.
  3. In a rectangular dish, place a layer of graham crackers at the bottom. Spread a layer of the cream cheese mixture over the crackers, followed by a layer of sliced strawberries.
  4. Repeat the layering process—graham crackers, cream cheese mixture, and strawberries—until all ingredients are used, finishing with a layer of strawberries on top.
  5. Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight to allow the flavors to meld and the graham crackers to soften.
  6. Slice and serve chilled. Enjoy this refreshing no-bake dessert!
