- 8 oz cooked pasta (penne or rotini)
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 8 oz cream cheese
- 1½ cups shredded cheddar cheese
- ½ cup grated Parmesan cheese
- 3 cloves garlic, minced
- 1 cup chicken broth
- 2 tbsp olive oil
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the Pasta: Boil the pasta according to the package instructions until al dente. Drain and set aside.
- Sauté the Garlic: Heat the olive oil in a large skillet over medium heat. Add the minced garlic and cook for 1-2 minutes, or until fragrant.
- Cook the Chicken: Add the chicken pieces to the skillet. Season with salt and pepper. Cook for 7-10 minutes, stirring occasionally, until the chicken is golden and fully cooked.
- Prepare the Cheese Sauce: Reduce the heat to low. Add the cream cheese and chicken broth to the skillet. Stir until the cream cheese has melted and the sauce is smooth. Mix in the shredded cheddar cheese until fully melted.
- Combine Pasta and Sauce: Add the cooked pasta and Parmesan cheese to the skillet. Toss until the pasta is fully coated in the creamy sauce. Cook for an additional 2-3 minutes to heat everything through.
- Serve: Garnish with fresh parsley before serving. Enjoy warm as a comforting main dish!
