- 2 rib eye steaks (1–1.5 inches thick)
- 1 tablespoon olive oil
- 2 tablespoons unsalted butter
- 3 cloves garlic, smashed
- 2–3 sprigs of fresh thyme or rosemary
- Salt and freshly ground black pepper (to taste)
Instructions
- Prepare the Steaks: Pat the rib eye steaks dry with paper towels. Season generously on both sides with salt and freshly ground black pepper. Let them sit at room temperature for 20-30 minutes before cooking.
- Heat the Skillet: Place a clean, dry cast iron skillet over medium-high heat for 5-10 minutes. The skillet is ready when a drop of water sizzles and evaporates immediately.
- Cook the Steaks: Add olive oil to the skillet and swirl to coat. Carefully place the steaks into the skillet without overcrowding. Cook for 4-5 minutes on one side, then flip and cook for another 4-5 minutes for a medium-well finish.
- Add Garlic Butter: In the last minute of cooking, add butter, smashed garlic, and fresh herbs to the skillet. Tilt the skillet slightly and use a spoon to baste the steaks with the melted butter mixture.
- Rest the Steaks: Remove the steaks from the skillet and place them on a plate. Let them rest for 5-10 minutes to allow the juices to redistribute, ensuring a tender and flavorful steak.
- Serve: Slice and serve the steaks immediately, garnished with a bit of the garlic butter from the skillet. Pair with your favorite sides for a complete meal.
