Soft and fluffy Banana Cinnamon Rolls with a rich cinnamon filling and cream cheese frosting! The perfect breakfast treat with a unique twist!


Ingredients

Banana Dough:

  • ¼ ounce package or 2 ¼ teaspoons yeast
  • ½ cup warm milk
  • ⅓ cup sugar
  • ¼ cup melted butter
  • 1 teaspoon salt
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 12 medium bananas, mashed (¾ cup mashed banana)
  • 4 ⅓ cups flour (measured correctly)

Filling:

  • ⅓ cup softened butter
  • 1 ½ tablespoons cinnamon
  • 1 cup brown sugar

Frosting:

  • 4 tablespoons softened butter
  • 4 tablespoons cream cheese (room temperature)
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1 ½ cups powdered sugar

Instructions

Dough:

  1. Dissolve the yeast in warm milk with 2 tablespoons of sugar. Let stand for 10 minutes until foamy.
  2. In a stand mixer (or mixing bowl), combine the yeast mixture with the remaining sugar, eggs, butter, salt, vanilla, and mashed bananas.
  3. Add flour and knead into a large ball. The dough will be soft and slightly sticky—continue kneading for a few minutes.
  4. Place the dough in a greased bowl, cover with plastic wrap, and let rise in a warm place for 1 hour, or until doubled in size.

Filling & Assembly:

  1. While the dough is rising, mix together the butter, cinnamon, and brown sugar to create the filling.
  2. Preheat oven to 350°F (175°C).
  3. Once the dough has risen, turn it out onto an oiled surface. Use an oiled rolling pin to roll it into a 15×10-inch rectangle.
  4. Spread the filling evenly across the dough and roll it tightly into a log.
  5. Slice into 12 even rolls (about 1 ¾ inches each) and place them into a greased 9×13-inch pan.
  6. Cover and let rise again for 10-15 minutes.
  7. Bake for 15-20 minutes until golden brown.

Frosting:

  1. While rolls are baking, cream together butter and cream cheese until smooth.
  2. Add vanilla, salt, and powdered sugar, then mix until fluffy.
  3. Let the rolls cool slightly before spreading the frosting on top.
