Banana Dough:
- ¼ ounce package or 2 ¼ teaspoons yeast
- ½ cup warm milk
- ⅓ cup sugar
- ¼ cup melted butter
- 1 teaspoon salt
- 2 eggs
- 1 teaspoon vanilla extract
- 1–2 medium bananas, mashed (¾ cup mashed banana)
- 4 ⅓ cups flour (measured correctly)
Filling:
- ⅓ cup softened butter
- 1 ½ tablespoons cinnamon
- 1 cup brown sugar
Frosting:
- 4 tablespoons softened butter
- 4 tablespoons cream cheese (room temperature)
- 1 teaspoon vanilla extract
- Pinch of salt
- 1 ½ cups powdered sugar
Instructions
Dough:
- Dissolve the yeast in warm milk with 2 tablespoons of sugar. Let stand for 10 minutes until foamy.
- In a stand mixer (or mixing bowl), combine the yeast mixture with the remaining sugar, eggs, butter, salt, vanilla, and mashed bananas.
- Add flour and knead into a large ball. The dough will be soft and slightly sticky—continue kneading for a few minutes.
- Place the dough in a greased bowl, cover with plastic wrap, and let rise in a warm place for 1 hour, or until doubled in size.
Filling & Assembly:
- While the dough is rising, mix together the butter, cinnamon, and brown sugar to create the filling.
- Preheat oven to 350°F (175°C).
- Once the dough has risen, turn it out onto an oiled surface. Use an oiled rolling pin to roll it into a 15×10-inch rectangle.
- Spread the filling evenly across the dough and roll it tightly into a log.
- Slice into 12 even rolls (about 1 ¾ inches each) and place them into a greased 9×13-inch pan.
- Cover and let rise again for 10-15 minutes.
- Bake for 15-20 minutes until golden brown.
Frosting:
- While rolls are baking, cream together butter and cream cheese until smooth.
- Add vanilla, salt, and powdered sugar, then mix until fluffy.
- Let the rolls cool slightly before spreading the frosting on top.
