Ingredients

  • 2 boneless, skinless chicken breasts

  • 1 avocado, sliced
  • 4 slices of your favorite cheese (Swiss, cheddar, or provolone work well)
  • 4 slices of bread (sourdough, ciabatta, or your choice)
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 small red onion, thinly sliced
  • 1 tomato, sliced
  • Butter or olive oil for grilling the sandwiches

Instructions

Prepare the Chicken

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat the olive oil in a skillet over medium-high heat.
  3. Cook the chicken breasts for about 6-7 minutes on each side, or until fully cooked and no longer pink in the center. Remove from the skillet and let rest for a few minutes before slicing thinly.

Prepare the Avocado and Cheese

  1. Slice the avocado and prepare the cheese slices. Set aside.

Prepare the Bread

  1. Spread a thin layer of mayonnaise and Dijon mustard on each slice of bread.
