- ½ cup butter, softened
- ¾ cup granulated sugar
- 1 egg
- ¾ Tbsp mint extract
- 3–4 drops green food coloring (optional)
- 1 ½ cup all-purpose flour
- ½ tsp baking soda
- 1 tsp baking powder
- 1 tsp cream of tartar
- ¼ tsp salt
- 1 cup mint chocolate chips
- 1 ½ cup Lucky Charms Marshmallows

Let’s walk through the steps of making these fun and flavorful Lucky Charms Cookies:
First, preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. This should take about 2-3 minutes.
Add the egg, mint extract, and green food coloring (if using) and mix until the color is fully combined. Scrape down the sides of the bowl as needed.
In a separate bowl, whisk together the flour, baking soda, baking powder, cream of tartar, and salt. This ensures everything is well combined.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix.
Once fully combined, fold in the mint chocolate chips and Lucky Charms marshmallows. Use a spatula to ensure even distribution.
Roll the dough into small balls (about 1 tablespoon each) and place them on a cookie sheet, leaving a little space between each cookie.
Bake the cookies for 10 minutes. The edges should be lightly golden brown, and the centers should still be slightly soft.
Let the cookies cool on the cookie sheet for 2 minutes before transferring them to a cooling rack to cool completely.
