Ingredients

Scale

  • 1 cup (2 sticks) unsalted butter, melted
  • 1 ¼ cups light brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 ¼ cups all-purpose flour
  • 1 cup old-fashioned oats
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¼ teaspoon cinnamon
  • 1 cup white chocolate chips
  • 1 cup semisweet chocolate chips

Instructions

  1. Melt Butter: Start by melting 1 cup (2 sticks) of unsalted butter in a microwave-safe bowl or on the stovetop. Let it cool slightly.
  2. Combine Wet Ingredients: In a large mixing bowl, combine the melted butter with 1 ¼ cup of brown sugar and ½ cup of granulated sugar. Mix until the sugars are fully incorporated and the mixture is smooth.
  3. Add Eggs and Vanilla: Add 2 large eggs and 2 teaspoons of vanilla extract to the butter-sugar mixture. Beat well until everything is fully combined and slightly frothy.
  4. Combine Dry Ingredients: In a separate bowl, whisk together 2 ¼ cups of all-purpose flour, 1 cup of old-fashioned oats, 1 teaspoon of baking soda, ½ teaspoon of salt, and ¼ teaspoon of cinnamon.
  5. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix, as this can lead to tough cookies.
  6. Add Chocolate Chips: Stir in the white chocolate chips and semisweet chocolate chips until they are evenly distributed throughout the dough.
  7. Chill Dough: Cover the dough and chill in the refrigerator for at least 30 minutes (or up to 2 days). This will help prevent the cookies from spreading too much during baking.
  8. Preheat and Prepare: Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  9. Scoop and Bake: Drop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches between each cookie. Bake for 10-12 minutes, or until the edges are golden brown and the centers are set.
  10. Cool and Enjoy: Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely. Enjoy!
