  • 1 scoop whey protein (vanilla flavor, about â…“ cup)
  • 1 ½ cups dark chocolate chips

 

  • 1 tablespoon coconut oil

Instructions

  • Prepare Muffin Tin: Place 6 paper liners in the wells of a muffin tin and set aside.
  • Make Peanut Butter Filling: In a small bowl, mix together the peanut butter and whey protein until smooth.
  • Melt Chocolate: Place the dark chocolate chips and coconut oil in a microwave-safe bowl; microwave in 30-second increments until fully melted, stirring between intervals.
  • Create Chocolate Base: Place approximately 1 tablespoon of melted chocolate in the bottom of each liner. Place the muffin tin in the freezer for 10 minutes or until the chocolate is set.
  • Add Peanut Butter Filling: Place 2 teaspoons of the peanut butter mixture on top of the chocolate layer in each cup.
  • Top with Chocolate: Add an additional tablespoon of melted chocolate on top of the peanut butter mixture in each cup.
  • Chill: Chill the muffin tin in the refrigerator until the chocolate is firm.

 

  • Store: Store the Protein Peanut Butter Cups in the refrigerator until ready to serve.
