This recipe, which I call “Shamrock Shake Pudding Cups,” is a delightful and easy no-bake dessert inspired by the classic McDonald’s Shamrock Shake.

  • 1 package (3.4 oz) instant chocolate pudding mix
  • 2 cups milk
  • 1 package (3.4 oz) instant mint pudding mix (or vanilla pudding mix + mint extract + green food coloring)
  • 2 cups milk
  • 1 cup whipped cream or whipped topping
  • Green food coloring (optional)
  • Chocolate shavings or mint candies (for garnish)

Instructions

Let’s walk through the process:

 

  1. Prepare the Chocolate Pudding: In a bowl, whisk together the chocolate pudding mix and 2 cups of milk until smooth. Let it sit for about 5 minutes to thicken.

  2. Prepare the Mint Pudding: In another bowl, whisk together the mint pudding mix (or vanilla pudding mix + mint extract) and 2 cups of milk. If using vanilla pudding, add a few drops of green food coloring to achieve a vibrant green hue. Allow to thicken for 5 minutes.

  3. Layer the Puddings: In clear cups or glasses, start with a layer of chocolate pudding. Add a layer of mint pudding on top. Repeat the layers until the cups are filled.

  4. Top with Whipped Cream: Spoon or pipe whipped cream on top of the pudding layers.

  5. Garnish: Finish with chocolate shavings or crushed mint candies for a festive touch.

  6. Chill: Refrigerate the pudding cups for at least 30 minutes before serving. This allows the pudding to set up further and the flavors to meld.
