For the Cupcakes:

  • 1 box devil’s food cake mix
  • ½ cup vegetable oil
  • 3 large eggs
  • ¾ cup Baileys

For the Frosting:

 

  • 1 cup butter, softened
  • 5 cups powdered sugar
  • ½ cup Baileys
  • ¼ cup cocoa powder
  • 1 tsp. pure vanilla extract
  • ½ tsp. salt
  • Chocolate sauce, for garnish
  • Shaved chocolate, for garnish

Instructions

 

  1. Preheat and Prep: Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.

  2. Make Cupcakes: In a large bowl, combine the devil’s food cake mix, vegetable oil, eggs, and ¾ cup Baileys Irish Cream.

  3. Bake: Bake according to the package directions (usually around 18-22 minutes) and let cool completely before frosting.

  4. Make Frosting: While the cupcakes are cooling, make the frosting. In a large bowl, combine the softened butter, half of the powdered sugar, ½ cup Baileys, cocoa powder, vanilla extract, and salt.

  5. Beat Frosting: Using a hand mixer, beat until smooth.

  6. Add Remaining Sugar: Add the rest of the powdered sugar and beat until fluffy.

  7. Frost Cupcakes: Once the cupcakes are completely cool, pipe or spread the frosting onto the cupcakes.

  8. Garnish: Garnish with chocolate sauce and shaved chocolate.

  9. Serve
