  • 1 can chickpeas, drained and rinsed
  • 3 tbsp vegan mayo
  • 1 tbsp mustard
  • 1 celery stalk, finely chopped
  • ¼ red onion, finely chopped
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • Whole-grain bread

Instructions

Let’s walk through the process:

 

  1. Mash Chickpeas: In a bowl, mash the drained and rinsed chickpeas with a fork until they are mostly broken down but still have some texture. You don’t want a completely smooth puree; some chunks are desirable.

  2. Add Remaining Ingredients: Add the vegan mayo, mustard, finely chopped celery, finely chopped red onion, lemon juice, salt, and pepper to the mashed chickpeas.

  3. Mix Well: Mix all the ingredients together thoroughly until well combined.

  4. Assemble Sandwiches: Spread the chickpea salad mixture onto slices of whole-grain bread to make sandwiches.

  5. Serve or Chill: Serve immediately or refrigerate for later. Chilling the salad for a bit allows the flavors to meld.
