This recipe, “Chickpea Salad Sandwich,” is a vegan take on classic tuna salad or chicken salad sandwiches

- 1 can chickpeas, drained and rinsed
- 3 tbsp vegan mayo
- 1 tbsp mustard
- 1 celery stalk, finely chopped
- ¼ red onion, finely chopped
- 1 tbsp lemon juice
- Salt and pepper to taste
- Whole-grain bread

Mash Chickpeas: In a bowl, mash the drained and rinsed chickpeas with a fork until they are mostly broken down but still have some texture. You don’t want a completely smooth puree; some chunks are desirable.

Add Remaining Ingredients: Add the vegan mayo, mustard, finely chopped celery, finely chopped red onion, lemon juice, salt, and pepper to the mashed chickpeas.
