  • Pinch of salt
  • ½ tsp black pepper
  • ¼ cup marinara sauce
  • ½ cup shredded mozzarella cheese
  • 12 turkey pepperoni slices (optional)

Instructions

Let’s walk through the process:

  1. Preheat Oven: Preheat your oven to 350°F (175°C).

  2. Blend Ingredients: In a blender, add the cottage cheese (excess liquid drained), egg whites, gluten-free flour, garlic powder, Italian seasoning, and a good pinch of salt and pepper. Blend until well combined. You can also use an immersion blender for this step, or a food processor.

  3. Prepare Baking Sheet: Line a sheet pan with parchment paper and spritz it with non-stick spray.

  4. Pour and Spread Batter: Pour the cottage cheese batter onto the prepared sheet pan and spread it out evenly into a circle shape. You want it approximately ¼ inch thick so it doesn’t break apart, but also doesn’t get too soggy.

  5. Bake: Bake in the preheated oven for 32-35 minutes, or until the flatbread has turned a golden brown color.

  6. Add Toppings: Remove the flatbread from the oven and spread a thin layer of marinara sauce over the top, followed by the shredded mozzarella cheese and pepperoni slices (if using).

  7. Return to Oven: Return the flatbread to the oven for 5 minutes, until the cheese is melted. You can broil for the last 2 minutes, watching closely, to crisp up the pepperoni pieces.

  8. Cool and Slice: Let the flatbread cool for 7-10 minutes until it firms up. This is very important, as the crust will fall apart if not cooled. Slice into 8 pieces and enjoy
