Ingredients

  • 2 slices sourdough bread (or bread of choice)
  • 1 tablespoon unsalted butter, softened
  • ½ teaspoon garlic powder (optional)
  • â…“ cup shredded cheddar cheese
  • â…“ cup shredded mozzarella cheese
  • 34 dill pickle slices (patted dry)
  • ½ teaspoon Dijon mustard (optional)

 

  • ½ teaspoon fresh dill, chopped (or ¼ teaspoon dried dill)

Instructions

Let’s get to the fun part – making the grilled cheese! I’ll guide you through each step, making it super simple.

Step 1: Prepare the Bread. Spread the softened butter evenly on one side of each slice of bread. If you’re using garlic powder, mix it into the butter before spreading for a more even distribution of flavor.

Step 2: Assemble the Sandwich. Flip the bread slices over so that the buttered sides are facing down. On one slice of bread, spread a thin layer of Dijon mustard (if using).

Step 3: Add the Cheese. Sprinkle half of the shredded cheddar and mozzarella cheese evenly over the mustard (or the bread if not using mustard).

Step 4: Layer the Pickles. Arrange the dill pickle slices on top of the cheese. Remember to pat the pickle slices dry with a paper towel to prevent the sandwich from becoming soggy.

Step 5: More Cheese! Sprinkle the remaining cheese over the pickle slices.

Step 6: Add Dill. Sprinkle the chopped fresh dill (or dried dill) over the cheese.

Step 7: Top with Bread. Place the second slice of bread on top, with the buttered side facing up.

Step 8: Cook the Sandwich. Heat a skillet or griddle over medium-low heat. Carefully place the assembled sandwich in the hot skillet.

Step 9: Grill to Perfection. Cook the sandwich for 3-4 minutes per side, pressing down gently with a spatula to ensure even contact with the pan. The bread should be golden brown and crispy, and the cheese should be melted and gooey.

Step 10: Melt Stubborn Cheese (Optional). If the bread is browning too quickly before the cheese is fully melted, lower the heat and cover the pan with a lid for 30 seconds to a minute. This will help to trap the heat and melt the cheese.

 

Step 11: Serve and Enjoy! Remove the grilled cheese from the skillet, let it cool for a minute or two, then slice it in half and serve immediately.
