Instructions
Let’s walk through the process:
Make the Cupcakes:
-
Preheat and Prep: Preheat oven to 325°F (160°C) and line two cupcake pans with cupcake liners.
-
Combine Ingredients: In a large bowl using a hand mixer, mix the cake mix, crushed pineapple (with juice), vegetable oil, and eggs.
-
Beat Batter: Beat at medium speed for 2 minutes.
-
Fill Liners: Pour the batter into the prepared cupcake liners, filling each liner about two-thirds full.
-
Bake: Bake for 20 to 22 minutes, or until a toothpick inserted in the center of a cupcake comes out clean.
-
Cool: Transfer the cupcakes to a wire rack and let them cool completely before frosting.
Make the Frosting:
-
Combine Ingredients: While the cupcakes are cooling, make the frosting. In a large bowl, combine the softened butter, 2 cups of the powdered sugar, pineapple juice, and vanilla extract.
-
Beat Until Smooth: Using a hand mixer, beat until smooth.
-
Add Remaining Sugar: Add the remaining 2 cups of powdered sugar and beat until light and fluffy.
Assemble the Cupcakes:
-
Frost: Transfer the frosting to a pastry bag fitted with a large star tip (or simply use a spatula or knife). Swirl the frosting onto the cooled cupcakes.
-
Garnish: Garnish each cupcake with a small pineapple wedge and a decorative straw, if desired.
