This recipe, “Frappuccino Cupcakes,” is inspired by the popular Frappuccino blended beverages from Starbucks, combining the flavors of coffee and chocolate in a delicious cupcake form

Cupcakes

  • 1 box chocolate cake mix
  • 3 large eggs
  • 1/3 cup vegetable oil
  • 1 cup brewed coffee
  • ½ cup mini chocolate chips

Frosting

 

  • 1 cup (2 sticks) butter, softened
  • 5 cups powdered sugar
  • ½ cup heavy cream
  • ¼ tsp. espresso powder
  • Pinch of kosher salt
  • Shaved chocolate, for garnish
  • Chocolate syrup, for drizzling

Instructions

 

  1. Make Cupcakes: Preheat oven to 350°F (175°C) and line two standard cupcake pans with 18 cupcake liners.

  2. Combine Ingredients: In a large bowl, combine the cake mix, eggs, vegetable oil, and brewed coffee. Stir until well combined.

  3. Fold in Chocolate Chips: Fold in the mini chocolate chips.

  4. Fill Liners: Divide the batter evenly between the cupcake liners, filling each about two-thirds full.

  5. Bake: Bake until a toothpick inserted into the middle of a cupcake comes out clean, 18 to 20 minutes.

  6. Cool: Let the cupcakes cool in the pans for 10 minutes, then transfer them to a cooking rack to cool completely.

  7. Make Frosting: Meanwhile, make the frosting. In a large bowl, combine the softened butter and about half of the powdered sugar. Using a hand mixer, beat until the mixture is smooth.

  8. Add Remaining Ingredients: Add the remaining powdered sugar, heavy cream, espresso powder, and salt. Beat until the mixture is fluffy.

  9. Frost and Garnish: Transfer the frosting to a pastry bag fitted with a large closed star tip (or use a spatula). Pipe the frosting onto the cooled cupcakes. Garnish with chocolate shavings and drizzle with chocolate syrup.

  10. Serve
