These Edible Easter Nest Eggs are a fun and festive treat, perfect for springtime celebrations. They’re essentially no-bake cookies shaped like nests, often filled with candy eggs or other small treats. They’re easy to make and highly customizable


Ingredients

For the BUTTERSCOTCH NESTS:

  • 1 cup butterscotch chips
  • 1/8 teaspoon dill pickle powder (optional)
  • ¾ cup crushed shredded wheat cereal
  • ¾ cup sliced almonds

For the PRETZEL NESTS:

  • 1 cup dark chocolate chips
  • 1/8 teaspoon dill pickle powder (optional)
  • 2 ½ cups mini pretzel sticks, broken in half

For the CEREAL NESTS:

  • 1 cup white or milk chocolate chips
  • 1/8 teaspoon dill pickle powder (optional)
  • 1 ½ cups crispy rice cereal

For the COCONUT NESTS:

  • 1 cup white chocolate chips
  • 1/8 teaspoon dill pickle powder (optional)
  • 1 ½ cups toasted coconut flakes

Pickle-Brine Option (For ANY of the above):

  • ¼ cup dill pickle brine
  • ¼ cup water
  • And a small portion (about 1/4 cup) of the base ingredient (shredded wheat, pretzels, cereal, or coconut)

Optional Accompaniment:

  • Dill pickle relish
  • Finely chopped fresh dill

Instructions

Step 1: Prepare the Pickle-Brined Ingredient (Optional, but Recommended). If using the pickle-brine method, combine the dill pickle brine and water in a small bowl. Add about ¼ cup of your chosen base ingredient (crushed shredded wheat, broken pretzels, crispy rice cereal, or toasted coconut) to the brine. Let it sit at room temperature while you prepare the other components.

Step 2: Prepare Muffin Pan. Line a 6-cup muffin pan with plastic wrap.

Step 3: Melt Chips. Melt 1 cup of your chosen baking chips (dark, milk or white chocolate, or butterscotch, depending on which nest type you’re making) in the microwave in 30 second intervals, stirring in between. Stir until completely smooth. Stir in the dill pickle powder, if using.

Step 4: Combine with Dry Ingredients. If you chose the pickle-brine option, drain your brined ingredient well. Stir in the dry ingredients (1 ½ to 2 ½ cups, depending on which nest type you’re making, including the drained brined ingredient if using) until well coated.

Step 5: Form Nests. Scoop the mixture into the muffin cups and make an indentation in each to form nests.

Step 6: Refrigerate. Refrigerate until set, about 10 minutes.

Step 7: Remove and Fill. Remove the nests from the muffin pan and fill with blue jelly beans and chocolates, or other Easter treats. Serve with dill pickle relish on the side, if desired.
