Ingredients

  • 1 cup green or brown lentils
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 tbsp olive oil
  • 1 bay leaf
  • 1 tsp thyme

 

  • Salt and pepper to taste

Instructions

Let’s walk through the process:

 

  1. Sauté Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery, and sauté until softened, about 5 minutes.

  2. Add Garlic: Add the minced garlic and cook for another minute, until fragrant.

  3. Add Remaining Ingredients: Add the lentils, vegetable broth, diced tomatoes, bay leaf, and thyme to the pot.

  4. Bring to Boil: Bring the mixture to a boil.

  5. Simmer: Reduce the heat and simmer for about 30 minutes, or until the lentils are tender.

  6. Season: Season with salt and pepper to taste.

  7. Remove Bay Leaf: Remove the bay leaf before serving.

  8. Serve: Ladle the soup into bowls and serve hot.
