- 1 cup green or brown lentils
- 2 carrots, diced
- 2 celery stalks, diced
- 1 onion, diced
- 2 garlic cloves, minced
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 tbsp olive oil
- 1 bay leaf
- 1 tsp thyme
- Salt and pepper to taste
