This recipe, “Mimosa Cupcakes,” is inspired by the classic brunch cocktail, the Mimosa, which combines Champagne (or other sparkling wine) and orange juice


Ingredients

Cupcakes:

  • 1 box vanilla cake mix
  • 1 ¼ cups Champagne, divided
  • 1/3 cup vegetable oil
  • 3 large eggs
  • 2 tsp. orange zest, divided

Frosting:

  • 1 cup (2 sticks) butter, softened
  • 4 cups powdered sugar
  • 1 tsp. pure vanilla extract
  • Pinch kosher salt

Garnish (Optional):

 

  • Gold sanding sugar
  • Orange Slices

Instructions

 

  1. Preheat and Prep: Preheat oven to 350°F (175°C) and line two cupcake pans with cupcake liners.

  2. Combine Ingredients: In a large bowl, mix the cake mix with 1 cup of Champagne, vegetable oil, eggs, and 1 teaspoon of orange zest.

  3. Beat Batter: Beat with a hand mixer at medium speed for 2 minutes.

  4. Fill Liners: Pour the batter into the prepared cupcake liners, filling each liner about two-thirds full.

  5. Bake: Bake according to package directions, or until a toothpick inserted into the center of a cupcake comes out clean (usually around 20 minutes, but check your specific cake mix).

  6. Cool: Let the cupcakes cool completely in the muffin tins.

  7. Make Frosting: Meanwhile, make the Champagne frosting. In a large bowl, using a hand mixer, beat the softened butter until light and fluffy. Add 3 cups of the powdered sugar and beat until no lumps remain.

  8. Add Champagne, Vanilla, and Zest: Add the remaining ¼ cup of Champagne, the vanilla extract, the remaining teaspoon of orange zest, and a pinch of salt. Beat until combined.

  9. Add Remaining Sugar: Add the remaining 1 cup of powdered sugar and beat until light and fluffy.

  10. Frost and Garnish: Frost the cooled cupcakes with an offset spatula or a piping bag. Garnish with gold sanding sugar and orange wedges, if desired.
