Description

This recipe, “Neapolitan Cupcakes,” is inspired by the classic Neapolitan ice cream flavor combination: chocolate, vanilla, and strawberry


Ingredients

Cupcakes:

  • 1 box white cake mix, plus ingredients called for on box
  • 1 box brownie mix, plus ingredients called for on box

Strawberry Buttercream:

 

  • ½ cup chopped strawberries
  • 8 oz. cream cheese, softened to room temperature
  • ¼ cup butter, softened
  • 3 ½ cups powdered sugar
  • ½ tsp. pure vanilla extract
  • Red food coloring (optional)

Instructions

 

  1. Preheat and Prep: Preheat oven to 350°F (175°C) and line two muffin pans with cupcake liners.

  2. Prepare Batters: Make the cake mix and brownie batter according to the package instructions.

  3. Layer Batter: Spoon about 2 tablespoons of brownie batter into the bottom of each cupcake liner. Fill the rest of the cup with vanilla cake batter.

  4. Bake: Bake until a toothpick inserted into the middle of a cupcake comes out clean, about 20 minutes.

  5. Cool: Let the cupcakes cool completely in the muffin tins. Repeat with the remaining batter to make 30 cupcakes total.

  6. Make Frosting: While the cupcakes are cooling, make the frosting. Add the chopped strawberries to a food processor and blend until the strawberries are mashed and almost completely pureed.

  7. Cream Butter and Cheese: In a large bowl, combine the softened cream cheese and butter and beat with a hand mixer until smooth.

  8. Add Sugar and Vanilla: Gradually add the powdered sugar and beat until fluffy. Add the vanilla extract and the strawberry puree and mix until evenly incorporated.

  9. Add Colour: Stir in food coloring, if desired, for a pinker color.

  10. Frost Cupcakes: Frost the cooled cupcakes with the strawberry frosting.
